This week’s Wisconsin restaurant pick: Bloom Bake Shop

Inside of Bloom Bake Shop

Some places get hyped so much that you walk in almost hoping they disappoint you a little.

Bloom was not one of those places.

This was more like: “oh… okay, now I get it.”

Because the second I got into that sweet potato donut, it made immediate sense why people talk about this place the way they do. And when the ham and gruyère croissant backed it up right after? Yeah. This became a real problem for my future self.

The Lowdown

  • City: Fitchburg, WI

  • Address: 1851 Monroe St, Madison, WI 53711

The Ambiance

Bloom feels polished without feeling stiff.

It’s bright, clean, and very Monroe Street in the best way. You walk in, there’s a cake case right there in front, and then as you move farther in, all the baked goods start calling your name. It feels cute without trying too hard.

This is not some giant sit-down brunch production. It’s more of a grab-a-box, try to act casual, and leave with more than you planned kind of place.

Two things are true: the parking can be annoying, and weekends can get busy enough that you may be dealing with a line out the door.

About the restaurant:

Bloom is a neighborhood bakery with its main shop on Monroe Street, and it’s built a reputation around fresh breads, pastries, cakes, sandwiches, and other scratch-made bakery staples.

Its focus is on local, organic, and sustainable ingredients, and its menu changes daily while still keeping vegan and gluten-free options in the mix. It also has a second Madison location, Bloom Northstreet, but Monroe is the main pickup spot for preorders and cakes.

Bloom’s sweet potato doughnut is also clearly one of its signature items. The bakery calls it one of its most popular doughnuts, and it’s sold individually on their site.

What I Ordered

  • Sweet potato donut

  • Ham and gruyère croissant

  • Twice-baked almond croissant

A very strong order. No notes on the strategy.

My thoughts on the food

Sweet potato donut
This was the star.

It didn’t even sound like something that should be that good. But then you bit into it and it completely worked. Soft, cloud-like, lightly sweet, lots of cinnamon sugar, and not overpowering on the sweet potato at all. More subtle than gimmicky.

I gave it a 9.7 out of 10. Best donut I’ve had in Madison proper.

Ham and gruyère croissant
This one sounds like it hit just as hard in a different lane.

Flaky on top, buttery glaze, a little crunch on the outside, and just absurdly good. This felt like the savory item that reminded you Bloom isn’t just good at sweets.

Twice-baked almond croissant
I thought this was okay, but it was messy, loaded with cream, and the cream started to overpower the croissant itself.

So not a miss. Just not on the same level as the other two.

Important & interesting info:

  • Open Tuesday–Saturday 8am–3pm, Sunday 8am–1pm (closed Mondays)

  • They do a ton of preorders for cakes and pastries: pickup is at the Monroe Street location

  • Cake preorder window typically opens Sunday night and closes Tuesday night for later-week pickup

  • Strong mix of vegan and gluten-free options, which a lot of Madison bakeries don’t do this well

  • There’s also a second location (Bloom Northstreet), but Monroe is the main hub

  • Weekends can get busy (lines are normal), and parking around Monroe can be a bit of a grind

  • They’ve been expanding recently, which says a lot about how popular they’ve become locally

Conclusion

Bloom is one of those spots that feels very Madison, but also good enough that it would stand out in a lot of other cities too.

The sweet potato donut is absolutely worth the trip by itself. The ham and gruyère croissant sounds like a no-brainer reorder. And even the item I liked least was still good, just a little too cream-heavy for me.

So here’s the simplest way to put it:

If you want a bakery in Madison that actually lives up to the hype, Bloom is very much in that conversation. Just be ready for a crowd, questionable parking, and the very real possibility that one pastry turns into three.
