This is my number one BUT specifically their Spicy Garlic (redipped). Spitfires fries the wings, sauces them, then cooks the sauce into the wing on the grill.
The sauce becomes part of the wing, not just a coating. Over 30 house-made sauces. The Spicy Garlic is the best wing I've had in Wisconsin on this entire tour. Full stop. Neighborhood bar feel, friendly staff, pool tables, patio. You walk in feeling like a regular. The wings keep you coming back.
Pro Tip: Get them grilled and re-dipped for a small upcharge. It takes an already great wing to another level entirely.
Pro Tip #2: Wait times can be annoyingly long, go at weird times.

West Allis. Near State Fair Park, loyal following, multiple Wingfest wins.
The wings are big with a light breading that locks in crunch and holds sauce. They rotate flavors constantly so there's always something new, but the JB3 (jerk, bourbon, brown sugar, buffalo) is a must every single time.
The service is great.
The vibe is great.
You leave thinking 'damn, those were really good.'
Pro Tip: Wing specials Monday and Thursday. Order more than you think you need, you will finish them.

The crunch-to-meat ratio might be the best on this entire tour. Perfect char, meat falling off the bone. Some of the best wings I've had in the entire state.
Don't sleep on this place.
